I am having a bad few days. I think I may have gotten some gluten by mistake on Wednesday. I feel horrible, gas, bloating, headaches, stomack hurts etc... I look like I swallowed a basketball and gained back a pound. On the possitive side, I had a great rootbeer float/milkshake fakeout. Can of diet rootbeer poured into pre frozen glass and then pour in a shot of heavy cream. Creamy goodness.

sneak attacks are the worst....especially when you don't know what you ate to make you sick...(big sigh)......I have gotten to the point where I eat only what I cook...there are only a few processed foods I trust and will eat.....your root-beer float sounds yummy!!!

I feel for ya, sweetie. I overate boiled eggs and have felt like crap all day. Plus, the bloating and discomfort made it hard for me to eat much, which made my blood sugar crash, which made it even harder to eat. Thank God for sugar free jello with a shot of heavy cream. That brought the blood sugar back up and I'm feeling better now. It's a process. We learn what we can and can't tolerate. Be kind to yourself and get better.

Keli gave me a great recipe for low carb rootbeer float. Pu ice, cream and 1/4 to 1/2 can rootbeer in the blender. Blend unil thick and creamy. Pour into a glass and add the rest of the rootbeer. I actually put the belnded mixture into the freezer until it froze completely and it was like ice cream. Then I put it in a tall glass and poured he rootbeer over the top. Man was it good. Next time I am going to top it with Reddi Wip, and I am going to try the cream and ice with some splenda and cocoa to make some chocolate ice cream. I think you could probably use any if the allowed berries, or even coffee if you like coffee ice cream. MAybe some slivered almonds or macadamia nuts. Mmmmm, just think of the possibities. And the great thing is none of these are very carb heavy loaded!
