Ok. Breakfast burritos. How do I make them not suck? Made one that was great in theory today: sprouted grain tortilla, egg whites with nutritional yeast (which is so tasty, would eat even if it wasn't healthy) sauteed with peppers and onions, topped with guac and salsa.

Was a sad soggy mess that I had to eat with a fork. Tips? Suggestions? Condolences?

Unrelated, but I want to gloat somewhere, an ex from college has been contacting me out of the blue, being all flirty and wanting to go out for drinks and catch up. We'd stayed friends on facebook, but I just blocked him from my feed and kind of forgot about him. He was a huge jerk and was always insulting to me, but I put up with it since I had zero self confidence at that time. He had dumped me at the time to join a frat and then date my friend. So, I don't feel warm and fuzzy about him, lol! If I was a good person, I'd kindly let him know I'm not interested. But I'm not. Gotta ponder how to handle this one....

ignore the ex. and your friend LOL You dont need that negativity in your life and you dont deserve it.My mom always says : go forward in life not back. For the breakfast burritos I use mission low carb wheat tortillas and toast em really well and make more of a breakfast taco instead of a burrito. One of my favs !

Vindictive Road is one of my old favorites, but I, too, have tried to stop treading that path. Getting older makes it easier, and trying to set an example for my daughter. Less salsa on the burrito might keep it from being of the wet variety, and grilling it after you roll it, I finally figured out that less is more with burritos.

The "secret" to the breakfast burrito is to keep the ingredients as dry as possible, so squeeze out the liquid from the veggies and salsa. Then eat it quickly before the tortilla gets soggy! (lol) Or you can just put it on a plate and eat it with a fork -- after all, it the taste that counts!

I had something vaguely similar for lunch today but instead of a tortilla I made a flat omelette with a couple of eggs and wrapped the rest in that. Fewer carbs and less likely to get soggy. I guess it depends on what you're aiming for, though. If you wanting to be vindictive, agree to go out when you're looking your absolute killer best then towards the end of the evening, tell him you just didn't click. Make sure you're on neutral ground though and that he doesn't know where you live ... some weirdos out there. @Phil - you can probably guess I don't have a daughter I should set a good example to 😈

Ignoring this guy will send a message - but that message might be that you are still angry and hurt about the past dealings with him. And you certainly would have the right to be. But if you go ahead and talk with him, you'll have the chance to spell out why you would not be interested in seeing him by saying you were surprised to hear from him given (and spell out the history here) and that if he thought it through he would realize that no one who was treated that way would want to resume any kind of relationship. [Obviously he hasn't really changed and is still completely self-centered - which you don't need to actually say to him.] This would not be vindictive and might be very healing for you (and him), especially if you didn't get the chance to say this in the past. I'd like to say the guy might have changed, but if he had he would have started with an apology for his past behavior. He may think you have forgotten and/or forgiven him because likely he has conveniently forgotten about how things were. I bet he just got dumped and started thinking about past girlfriends who made him feel powerful. Whatever you decide to do, let it be from a position of power and self-worth - my sense of you is that you won't have any problem with that now!

I'm starting to give up on making healthy "recipes" that are substitutes for unhealthy ones. Sometimes it's better to deconstruct the whole thing, i.e. reduce the recipe to its healthy elements and eat them the way they taste good...in your case cook the egg whites and nutritional yeast, then top them with the guac and salsa on the plate, serve the peppers and onions on the side, and roll up the sprouted grain torilla by itself instead of stuffed. That way you get to enjoy the individual flavors.

I do breakfast burritos every weekend. I let the eggs cool in the pan a little while so the steam doesn't make the tortilla soggy. I use hot sauce instead of salsa because it has less liquid. Sometimes I eat with a fork intentionally with cheese and sauce poured over the top enchilada style.

After you wrap your stuff in your tortilla, place it a pan with a touch of olive oil and "fry" the outside...

STAGE 1 - Just keep brusquely but sweetly putting him off; you know, "really busy at work after promotion," "girlfriend's bachellorette in rejkevik," "biking across uruguay," etc... Drag this out for weeks and weeks and weeks, all the while periodically posting pics of your new, improved, hotter by the day, self, hard at play. That will set the stage nicely....

STAGE 2 - Put in the work and get that burrito right, (water in the egg whites) while you put that keen sense of humor to work concocting the appropriate endgame. You have plenty of time to get it just right; and frat boy's mental state will be suitably, uh, piqued... #betterthangator

Thank you everyone for all of the excellent advice, about both boys and burritos! I love all of the different perspectives, definitely a great aspect of this community. I'll have to mull things over a bit. And keep my burritos nice and dry.

I buy the salsa that is VERY chunky, measure out what I'm gonna use, then let it drain while I'm cooking the eggs. Eat FAST! On the other subject, I'm all for the high road but sometimes find it hard to find, let alone take, lol! Good Luck!

Your burrito sounds yummy.... Nothing wrong with eating it with a fork. LOL. And I love the advise you got on the boy too. Cowboy, you made me laugh out loud. And Jimmie... I tend the think like you. Probably not the way a sweet Christian woman should think, but dang, I have a few of those old big-headed frat boys in my past too (way, way past) and sometimes they just need a tiny taste of their own medicine.
