Feeling so much better today. I came home and made homemade salsa from fresh veggies I got at the farmer's market. It's really good but it needs to sit in the fridge overnight so all the flavors soak together.

There's a commercial for one of the frozen dinners that says that it's a myth that chopping vegetables is relaxing at the end of a long day. Maybe I'm weird, but I like chopping vegetables when I get home. It gets out frustrations and something about all the pretty colors of the produce is relaxing. I just cut up a ton of stuff and it's really calming. I felt the same relaxation last week when I made homemade sauce. (I live in tomato country and it's summer.)

Had a good day today. I really have to not eat so much crap it put me in a foul mood yesterday (I think it was coming down off the sugar rush too.)

Get out of my head...I've been thinking for the past couple days that I need to find a good salsa recipe so I can hit up the farmers market & get what I need! I personally love chopping & dicing, especially with a nice sharp knife. DH bought me a Slap Chop once & it was very sweet but the thing sucked. Just sayin...I'm old skool. Glad today was a good one, you deserve a break!

Kat, I don't have a recipe but I basically cut up about 6 tomatoes, an onion, a green pepper, two banana peppers, one long green pepper, two jalapenos and cut the corn off of two ears. Then I squeezed lemon wedges over the whole thing and added a little amount of sea salt. I'm letting it sit overnight so all the flavors mix. I have a kind of relative (It's not a blood relative but there's family in common) that used to live in New Mexico and this is how he's made salsa so I just went from there. I really don't think you need much more than vegetables, frankly.

Ooh thanks for the ideas, ladies! My favorite all-time salsa was the spicy one they served at ChiChis, but ChiChis is no more here in Minneapolis. There is a bottled ChiChis brand spicy salsa in the grocery stores that tastes NOTHING like what the restaurant served, wth?! But between your two versions that's enough info for me to take an initial stab at it. :) Thanks ladies!!
