Purple cauliflower gets its beautiful hue, which can vary from pale to jewel-toned, from the presence of the antioxidant anthocyanin, which is also found in red cabbage and red wine. The orange/yellow cauliflower comes from a genetic mutation that allows the plant to hold more beta carotene. It also contains about 25% more vitamin A than white cauliflower. I roast it, steam it, mash it, rice it or make it into a soup.

CAULIFLOWER PIZZA INGREDIENTS Crust · Nonstick spray · 2 1/2 -3 Cups Cauliflower, grated (about large head) · 1 Large egg, lightly beaten · 1 1/4 Cups shredded part-skim Mozzarella cheese · 2 Tablespoons grated Parmesan cheese · Kosher salt and freshly ground black pepper to taste Toppings Choose from the following or add your favorite toppings · Tomatoes · Tomato sauce or pizza sauce · Turkey Pepperoni · Chicken · Olives · Onions · Peppers · Your choice of cheese Directions 1.Line a rimmed baking sheet with parchment paper, and preheat oven to 425ºF. 2.Grate 2-3 cups of cauliflower . Place in a large microsafe bowl and microwave for seven to eight minutes, or until soft. Remove from the microwave and let cool. 3.Combine Cauliflower, egg, cheese and salt and pepper to taste. Pat into a 10-inch round on the prepared pizza pan. Spray lightly with nonstick spray and bake for 10 to 15 minutes, or until lightly golden brown. 4. Top the pizza with the sauce, your choice of toppings and cheese. Bake in the oven until melted and bubbly, another 10 minutes. If you like you could top it off with basil and a drizzle of olive oil before serving.
