So this week I had a couple of RDI target misses that was really too much. Due to a bump up in my exercise, I did get hungrier and ate more this week. But that can be a slippery slope - need to refocus on why I'm here. Even, for the first time in 77 days, I had a less than 16 hour fast. Now I know I must get back to basics, particularly, putting my own meals together so I'm not tempted to pick-up food when I'm out. I haven't been really strict on myself with the exercise routine, and that is another change I need to make.

Tonight I made some delicious beef and vegetable stew put together from mostly fresh ingredients. Really had fun dicing the meat with scissors, cleaning and trimming the veggies, and slicing up rainbow carrots, putting it all together. While it cooked I counted all the calories,(rounding up): 4 medium russet potatoes 440 cal, + 3 rainbow carrots 75, + 2 large broccoli crowns 200, + 5 medium tomatoes 110, + 1 large can of hominy grits 360, + 8.3 ounces lean stew meat 415, for a total of 1600 calories. When it cooled off I portioned it out by 6 for 267 calories per serving.
