I'm changing up some of the food I normally eat today - nothing drastic, but just some changes. I decided to try an MIM again, but tried a different recipe off this site instead. The first time - original recipe - it just turned out really dry and not all that appetizing. Then I found a recipe for Cinnamon Breakfast Muffin and it's awesome! I think the difference is putting plain yogurt in the recipe and reducing the flaxseed meal just a bit(compared to the other recipe I had tried). The only thing I changed from the Cinnamon Muffin recipe was that I used 2 packets of Truvia rather than 2/3rds packet of Splenda. I think Truvia is 0 carbs due to the sugar alcohol, so you could subtract .67 carbs from the recipe, meaning that 1 muffin is 201 calories and 2.5 net carbs (rather than 3.17).
We were supposed to go to a dinner tonight with a large group from DH's work, but have begged off due to storms in the area plus we just really weren't into it. It was to be at an Italian restaurant. Unfortunately, after looking at their menu online, everything seemed to be pasta, or smothered in some sauce, or cooked with seasoned breadcrumbs, etc. Not even skewered shrimp, or plain fish or scallops, or something similar! The only thing DH and I could find that seemed safe was a Caesar salad with grilled chicken. That's OK, but pretty lackluster for a "fine dining" experience and price.
So, we'll put together something here at home that's on plan, kick back in the La-Z-Boys and watch the Green Bay Packer game. We're such party animals......
