Good Morning Everyone! Scale is down again today, so we know it's going to be a good day. I was super low on calories yesterday, but it worked out in the end. I had both of my best friends over yesterday for dinner, and we made daiquiris after dinner and sat around outside listening to music from 20 years ago and chatting while the kids played board games. It was good. It was cooler since it had been raining all day. So even though we didn't swim yesterday, it was a good day!

So I found a recipe online using the instant pot, that starts with a frozen beef roast, and it comes out so tender you can cut it with a spoon. It was amazing. The break down for it was: 3.5lb roast, you put the wire rack in the bottom of the pot and add about an inch or so of beef broth. I seasoned both sides of my roast, then sliced up 1/2 an onion and some fresh garlic and tossed them on top. Close up the pressure cooker and set the vent to sealed. Cook on high for an hour and 45mins, then let it naturally de-pressurize (takes about 30mins) and it was done. I did stick my roast under the oven broiler just to brown up the top some too. I also made a gravy in the instant pot with the juice that was in there, it was most excellent.

Plans for today are: Laundry, sweeping, mowing the yard, and maybe a swim in the pool.
