Well here I go... trying out this new app and giving things the benefit of the doubt. I have officially been vegetarian for a month now so no meat for me which has been easier than I thought. I feel that I am holding onto weight though since I’m now eating legumes as sometime meat substitutes. I try to stay away from pasta but still have it on occasion but don’t keep it in the house. I’ll use spaghetti squash or makes zoodles which I’ve come to love now. Today I made some pozole’ and used Jackfruit instead of chicken or pork. I do still eat cheese and eggs and on a rare occasions fish and tofu. I’ll also use Gardein and Quorn meatless alternatives but am trying to slowly ween myself off the meats substitutes or use those on rare occasions because Gardein has soy (but they’re stuff is sooo good!) and Quorn is high protein and no soy which I love, plus the texture of the majority of their stuff is right on point! Haven’t been able to try Beyond Meat products yet but we’ll see. Anyway, long post and I’m sure I bored a few people. Ultimate goal is not to be skinny but be healthy and make it to a vegan lifestyle.

I am on a 1300 calorie vegetarian diet with a little fish now and then. I have a long way to go and am hoping that support from others like me will help. I do eat eggs and dairy and tofu and low carb fare. I try to eat simply and not dwell on food.
