This recipe comes from the Atkins site and was originally Ms. Woods Whey Cinnamon Rolls. Then, someone posted a variation on it which was stated to be more moist. And then, of course, I tweaked it a bit more.

The batch makes 12 muffins.

Total batch info is 1262 calories, 92.52 fat, 29.24 TC, 15.0 fiber, 14.2 NC, 87.39 protein.

Each muffin becomes...105 calories, 7.71 fat, 2.44 TC, 1.25 fiber, 1.18 NC, 7.28 protein.

These are NOT anywhere near as large as a MIM!!! They are smaller and denser.

3 extra large eggs
2 scoops Body Fortress Super Advanced Vanilla Whey Protein
1 scoop Bob's Red Mill almond meal flour (use same scoop from above)
3 Tblsp. melted butter
3/4 Tblsp. baking powder
2 packets of Truvia (or other suitable sweetener)
2 Tblsp. Fage 0% Greek yogurt
1/4 cup Planters recipe-ready pecan pieces
2 tsp. cinnamon

Preheat oven to 350 degrees. Mix all ingredients, except cinnamon, by hand in a bowl. Fill 12 muffin cups with an equal amount of batter (I used an ice cream scoop). Sprinkle cinnamon on top of each muffin.

Bake muffins for 9-11 minutes. The color of the muffins remains light so don't cook them until they get brown or they'll be overcooked!!

Hey there Bren. These aren't too bad and Heather (Thersmith) was looking for opinions on MIMs travelling when I said I'd post a recipe for a different kind of muffin that travels reasonably well. I'm not a very good cook, so there may be someone else who could further adjust this recipe and get these little buggers to fluff up a bit. Hope your day is going well.

Buffy, see what you think and if you've got any ideas to get some air into these, let me know. Maybe it's just the almond flour that won't let these rise all that much? They're still good and I like them 'cuz they don't add much in carbs or calories.

Muffins? Did somebody say muffins? LOL, I love muffins! The recipe sounds interesting enough to give it a try, however, I don't have that brand whey protein stuff, I think I bought so jillian michaels(?) to try on a pancake recipe I am dying to try, anyway so far have never even opened it up, so my "I'm a dummy" question is...How big is a scoop? Maybe a little baking powder too? I don't know, really I am always totally flabergasted by those who figured this stuff out! BTW, most of the low carb baked stuff I have made, very tasty by the way, was a bit on the dense & heavy, but moist side.

OK, GG...the baking powder is already in the recipe to the tune of 3/4 Tablespoon. As for the scoop....well, there's a scoop that comes with the whey protein. Maybe there's one in your canister as well? The scoop I have says "70 cc" on it. Not a problem for inputting the protein powder because there are Nutrition Facts on the canister for 2 scoops. The real problem came when I tried to do the conversion of 70 cc (1 scoop) of almond flour into the measuring units in the database. If my math is correct (and, anyone, please correct me if I'm way off), the 70cc scoop converts to approximately 1.18 servings of almond meal flour (1 serving of the almond meal is 1/4 cup, or 28 grams). I think it's all pretty darn close. If you have no scoop, try about 1/2 cup protein powder and 1/4 cup almond flour. The brands aren't all that important, but I thought it might help to know where the nutritional info. came from. Happy baking!!

Sandy - Is the batter really thick? From the ingredient list I would think so. I think a little baking soda and maybe a touch of club soda or water to "lighten" up the batter would help to puff them up a little more. Almond meal really soaks up any liquid in a batter.

Babs, yes, the batter is fairly thick, even with the added yogurt which was not a part of the original recipe. I'm due to make up another batch in the next few days, so I'll give your suggestions a try and see what happens. Thanks.
