I'm old school always made a bechamel sauce then added cheese and macaroni etc. I don't do that anymore, 40 years of my life I'm never going to get back lol

Mac & cheese is royalty of comfort food 😃
I use to love it, but in the last few years I discovered a lighter and more nutritious version, and I honestly find it tastier and still equally comforting, even though I'm not a fan of cauliflower...
If you wanna try it, cook cauliflower in a bit of water with lid on, more like a steaming, then mash or blend.. add salt and pepper, decent amount of nutritional yeast, soya single cream and only small amount of grated cheese so it's creamy and not runny (I love grated mozzarella)...
Could be regular single cream too, but I choose soy because I don't like to consume too much dairy and it's less kcal..
I hope you try it because it's one of my favourite pasta dishes..
