Well my OAMC won't really be once a month but I'm okay with that. I decided I would make a Boston butt yesterday in the crock pot. It made last night's meat and enough for 5 more meals. 14 bucks for 6 meals, 3 people per meal. Under 80 cents per serving! Today I prepped lazy chicken fajitas. I got out the foodsaver I almost never use and made 4 meals for crock pot days. Tomorrow will be 12ish pounds of chicken cooked in the crock pot while I'm out all day and when I get home I'll shred it. I added a few carrots, celery, and onions with some water so I'll have some homemade stock on hand to freeze (or use right away) I decided to do precooked meat and crock pot ready to go because sometimes I know I'll forget to put the crock pot on and I need backup. I already did 3 cooked beef with broccoli's so I'm off to a decent start.
Tonight is about pizza, I found a recipe online for low carb pizza using ground chicken as the base. I hope it tastes okay. I plan to add lots of bacon on top and maybe some peppers and mushrooms. I haven't decided yet but I need to soon.
Tomorrow I need to go to the store and pick up some spaghetti squash. I'm cooking three of them. I finally found out you can freeze it. If you put it in a muffin tin it makes a decent serving size plus after it freezes you can pop them out and throw them in a bag for storage.
I found a few other recipes I want to try so I'll pick up the stuff for them and get them ready for crock pot days. Bonus no leftovers since they are already measured out for dinners and I get to use my smaller crock pot.

The chicken crust pizza was really good. My son said I could make it again. Now to add it to my recipes if I can't find it in the database. :)
