Watching this Adam Ragusea video this morning about Calories. Interesting and nerdy. I really enjoy Raguseas informative videos. Not so much with his cooking videos though. He's a great researcher not so great at cooking imo.

I don't think I've actually tried any of his recipes, but I do enjoy him. I have watched this one. Another one I thoroughly enjoy is Gil Carvalho's Nutrition Made Simple. He's very much plant-based, and I don't know if that aligns with your WOE, but he focuses on the nutrition and isn't strident about it
