Fasted 16 hours. I snacked a whole bunch late last night. Stayed up watching Hitchcock movies with roommate, and wanted popcorn... and butter... and pistachios. Went way over on calories. This week has been kind of a bust. But it is sooooooo nice having my roommate home. He has been gone like 2/3 of the time since last Thanksgiving, helping his parents. First they had some health issues and then they sold their home of 40 years and moved closer to the kids. So it has been a lot for him and his sister and their folks. Now they are in their new place which caters to 55+ and has way more amenities and social supports. So it is nice for all of us -- him, me and the "livestock" (that is what his mom calls the dog and kitties) -- to have him back ft! Then I made this puff pastry spanakopita. Just heavenly. Discovered fresh chives and a squeeze of lemon really gave it that little something extra. Made two and giving away most to my roommate's mom and sis.
