Oh my Gosh I have had terrible cravings ALLLL DAY for something cheesy, creamy and naughty. I have always loved Pasta dishes I mean terribly so. But hey when you grow up around a whole extended Italian family your whole life what do you expect? So I had remembered seeing somewhere either here or on Atkins community someone had posted a recipe for mock noodles using zucchini. Anyhow I pretty much remembered the instructions so off to the store I went for the ingredients. I used yellow summer squash instead. It looked better and it was on sale. I made long ribbons out of it with a peeler and then fried them in butter, salt, pepper, garlic powder, and a touch of nutmeg at the last. I added some heavy cream, Parmesan cheese and bacon bits and OMG!!!! It tasted so good I mean soooooooooooooooooooooooooooo good. It was wonderfully sweet and nutty. Had the perfect texture. It was beautiful and soooo much better for me than the traditional Fettuccine Alfredo I love so dearly. I did not even miss the noodles. It didn't leave me feeling heavy either. It did set me back some in my carbs but I had them to spend today. I could have eaten less of it though but oh it was soooooooo good. I didn't feel the least bit guilty about devouring the whole pan I made.
