This version was super easy
-6 cups veggie broth
-1 can diced tomatoes
-1 chopped yellow onion
-1 cup sliced okra
- salt/pepper
-1 clove garlic
-3/4 cup unsalted cashews
-1/4 cup peanuts
Simmer for 20 mins or until your okra is cooked through
-add one can light coconut milk
- 2 cups corn kernels (or one can corn)
Bring to a simmer again for 2 mins.
Serve.
Again the flavor were great and it’s really light and fresh. I just felt like it was a little on the thin side. I’m going to play with it a bit before i’ll Be happy with it but it’s not bad now.
