Well still not up on the calories, I really wanted to reach 900 today, just didn't have time to each lunch. Though I ate a huge dinner...low fat and low cal, but it was a lot of food. I call it....
Suz's Taco Salad...kinda high in sodium though (you know how those taco seasonings are)
1 lb of butterball white meat (the leanest) turkey 1 pack of taco seasoning 1/2 cup of pico de gallo 1/2 can of chopped green chilies a bit of shredded low fat or fat free cheddar 1 tbsp of light (Daisy) sour cream 1 cup of shredded lettuce
Brown the turkey meat until it is no longer pink, add in pico and taco seasoning, and chilies let simmer for about 5-10 mins. Put shredded lettuce in a bowl, top with turkey mixture, add a small portion of shredded cheese and 1 tbsp of light sour cream. If you like olives or avocados or anything else add it....just be sure to watch your portions and account for the extra fat/cals.
The turkey mixture is good for about 4 - 4oz servings.
