Bought 2 sugar pumpkins tonight at Trader Joe's to roast tomorrow. Can't decide what to do with them after that. Found recipes for smoothies, puree, butter, pie...but I want something....I dunno. Easy, first of all. Maybe mix with some cream cheese? Oh, and I'll be roasting the seeds too. MMMM!
Oh! I know!! I can make my old WW pumpkin muffin recipe. It's a box of yellow cake mix (have my GF mix in the pantry!), a can of pumpkin (mine will be fresh!), a cup of water and cinnamon chips (I'll use pumpkin spice instead)...mix, pour in muffin tin and bake at 350 (I think) for like 25 minutes?? I may have a winner!
Gonna do salads and happy cow burgers this week. I know I will need more than that, but nothing tickled my fancy while I was shopping. We'll see what turns up.
