Doesn’t the inclusion of banana stop it being low carb which is the usual reason for coconut flour? Still sounds good though 👍🏻

It’s eliminating wheat and the unhealthy carb. Two bananas gives you a small amount per slice of healthy natural and unprocessed carb xx :)

I’m trying to eliminate wheat as it turns to sugAr in the body. Is hard as so many foods contain wheat !

That looks good! Other none wheat flour to use are,spelt, kamut, teff and rye. I use them in pancakes, pizza and bread making.

Mash 2 overripe bananas
Add
1/2 cup coconut flour
5 eggs
Teaspoon baking powder
1/2 Teaspoon bicarbonate soda
2ml salt
5ml cinnamon powder
Teaspoon vanilla extract
Pea can nuts optional
To sweeten if required use coconut sugar or two tablespoons honey.
Mix well and bake in one large or two small loaf pans at 180 for 30 minutes
Could cover with foil to prevent baking too dark.
